  • 2 teaspoons Olive Oil
  • 1 Each Yellow Onions, diced
  • 1 Each Green Bell Pepper, diced
  • 1 Rib Celery, diced
  • 4 Cloves Garlic, minced
  • 8 Each Chicken Thighs, boneless skinless, cut into 1″ pieces
  • 8 Cups Water
  • 3 Tablespoons Chicken Bouillon
  • 3 Each Carrots, medium, sliced
  • 4 Each Yellow Potatoes, large, quartered
  • 2 Each Corn on the Cob, cut into 3″ pieces
  • 6 Ounces Angel Hair Spaghetti

Instructions

  1. Add the olive oil to a large heavy-bottomed pot (like a Dutch Oven).

    Ingredients: 2 teaspoons Olive Oil

  2. Add the onions, bell pepper, and celery and cook for 5 minutes over medium-high heat until soft.

    Ingredients: 1 Each Yellow Onions, 1 Each Green Bell Pepper, 1 Rib Celery

  3. Add the garlic and cook a further 2 minutes.

    Ingredients: 4 Cloves Garlic

  4. Add the chicken pieces, stir well, and cook for a couple of minutes until lightly browned.

    Ingredients: 8 Each Chicken Thighs

  5. While that’s happening, boil some water in a kettle and add to a measuring jug. Add the bouillon to that hot water and mix well until dissolved.

    Ingredients: 8 Cups Water, 3 Tablespoons Chicken Bouillon

  6. Pour the bouillon mixture into the pot, then add the remaining water.

  7. Stir well and bring to a boil. Turn down the heat to a low simmer and cover. Simmer like that for about 45 minutes.

  8. Add the sliced carrots and potatoes and cook for another 30 minutes. Then add the corn and continue cooking for another 15 minutes, or until vegetables are tender.

    Ingredients: 3 Each Carrots, 4 Each Yellow Potatoes, 2 Each Corn on the Cob

  9. Add the angel hair pasta and cook for about another 4 minutes until al dente, then turn off the heat.

    Ingredients: 6 Ounces Angel Hair Spaghetti

  10. Taste the broth to see if you need to add some salt and pepper. Season to taste and serve hot.

Notes

Any cut of chicken is fine for this Cuban Chicken Soup recipe. I find that chicken thighs fall apart nicely though, which is ideal in a soup. They also tend to have more flavor compared to chicken breast.

If you have access to bone-in chicken thighs, I highly recommend using them. The bones are easy to fish out after cooking and contribute significantly more depth of flavor to the broth.

To make things quicker, you could use the meat from a pre-cooked rotisserie chicken. Shred the chicken and add it to the soup along with the carrots and potatoes. This allows you to skip the initial 45 minutes of simmering the chicken, drastically reducing the overall cooking time.
