As a crucial reminder: DO NOT try to pick up or move the pastry top until it has cooled completely. The steam trapped inside keeps it puffed up immediately after baking. Trying to handle it too soon will likely cause it to deflate, losing its beautiful flaky texture.
I like to use a fork to press down the edges of the pastry lid before baking. This simple trick helps to prevent the puff pastry from rising too much around the edges and creates a neat, finished look.
For an elevated flavor profile, consider adding some of your favorite dark beer or ale to the filling, transforming this into a delicious steak and ale pie. Replace 1 cup of beef stock with beer.
