Ingredients

  • 2 Cups Leftover Mac and Cheese (thoroughly refrigerated and cold)
  • 4 Slices Bacon (cooked until crispy and finely chopped into ¼” pieces)
  • 4 Ounces Velveeta Cheese (cut into small ¼” cubes)
  • 2 (2 Ounce) Bags Nacho Cheese Doritos (finely crushed into crumbs)
  • 2 Each Large Eggs
  • ½ Cup Milk
  • Cooking Oil Spray (for the air fryer basket)

Instructions

  1. Prepare Bacon & Velveeta: If using raw bacon, cook it until crispy, then finely chop it into ¼-inch pieces. Cut the Velveeta cheese into similar ¼-inch cubes. Set aside in separate small bowls.
  2. Crush Doritos: Place the Nacho Cheese Doritos into a sturdy resealable bag. Use a rolling pin to crush them into fine crumbs. Alternatively, pulse them in a food processor until finely ground. Pour the crumbs into a shallow mixing bowl for easy dredging.
  3. Make Egg Wash: In a separate medium mixing bowl, thoroughly whisk together the large eggs and milk until well combined. This is your essential egg wash, which will help the Dorito crumbs adhere.
  4. Form Mac & Cheese Bites: Take an ice cream scoop (or about 2 tablespoons) of the cold, leftover mac and cheese into the palm of your hand. Gently flatten it into a small disc. Place one piece of chopped bacon and one cube of Velveeta cheese in the very center of the disc. Carefully enclose the filling by rolling the mac and cheese around it, forming a tight, uniform ball. Ensure there are no cracks or openings.
  5. Coat the Bites: Dip each formed mac and cheese ball first into the egg mixture, ensuring it’s fully coated.   7. Preheat Air Fryer: While the bites are freezing, preheat your air fryer to a precise 380°F (193°C). Allowing the air fryer to reach its target temperature ensures consistent cooking from the start.
  8. Air Fry the Bites: Lightly spray the inside of the air fryer basket with cooking oil spray. Carefully place the frozen mac and cheese bites into the basket in a single layer, making sure they do not touch to allow for optimal air circulation. Give them a quick, light spray with cooking oil on top for extra crispiness.
  9. Cook to Golden: Cook for approximately 10-12 minutes, gently shaking the basket halfway through cooking, until the bites are beautifully golden brown and crispy on all sides.
