  • 1 Tablespoon Unsalted Butter
  • 1 Each Yellow Onions, chopped
  • ½ Each Green Bell Pepper, chopped
  • 3 Cloves Garlic, chopped
  • 1-½ Cups Cooked Long Grain Rice
  • 1 (15 Ounce) Can Red Kidney Beans, drained and rinsed
  • 1 (15 Ounce) Can Fire Roasted Corn, drained
  • 1 Cup Chicken Broth
  • ⅓ Pound Smoked Sausage, chopped into small pieces
  • 1 Pound Crawfish Tails (thawed if frozen, drained)
  • 1 teaspoon Creole Seasoning
  • Salt and Pepper to taste
  • 2 (10 Ounce) Cans Red Enchilada Sauce
  • 2 Cups Provolone cheese, shredded (or your preferred melting cheese)
  • 12 Each Flour Tortillas (8-10 inch)

Instructions

  1. Pre-heat the oven to 350°F (175°C). Add 1 Tablespoon of unsalted butter to a large skillet and melt over medium-high heat.
  2. Add the chopped yellow onions, green bell pepper, and minced garlic. Sauté, stirring occasionally, until the vegetables are soft and translucent, about 5-7 minutes.

  7. Pour the remaining enchilada sauce evenly over the rolled tortillas, ensuring they are well-covered. Then, generously sprinkle the rest of the shredded cheese over the top of the enchiladas.
