Instructions
- Preheat the oven to 325°F (160°C). Prepare your donut pan(s) by lightly greasing them with cooking spray.
- In a large bowl, combine the all-purpose flour, light brown sugar, baking powder, pumpkin pie spice, salt, and baking soda. Whisk these dry ingredients together thoroughly until well combined.
- In a separate large bowl, whisk together the pumpkin puree, large eggs, milk, and cooled melted butter until the mixture is smooth and fully blended.
- Pour the wet ingredients into the dry ingredients. Using a spatula, gently fold the mixture together until just combined. Be careful not to overmix, as this can lead to tough donuts. A few small lumps are acceptable.
- Transfer the donut batter into a piping bag (or a large resealable plastic bag with the corner snipped off). Pipe the batter evenly into each greased donut cavity, filling them about two-thirds full.
- Bake in the preheated oven for 8-10 minutes, or until the donuts are lightly golden and spring back when gently touched.
- Remove the pan from the oven and allow the donuts to cool in the pan for 2-3 minutes.
- Carefully transfer the donuts to a wire cooling rack and let them cool completely before frosting. This step is crucial to prevent the frosting from melting.
- Once the donuts are fully cooled, spoon or pipe the cream cheese frosting generously on top of each donut. For an appealing finish, sprinkle a little extra pumpkin pie spice over the frosting before serving.
