It’s a really easy way to make the best buttery crust you’ve ever tasted, ensuring a tender and flavorful foundation for your fillings. However, if time is of the essence, don’t hesitate to use a store-bought crust – they work wonderfully and I promise, I won’t judge!
  • Chill Your Dough: Always chill your pie dough thoroughly before rolling and again before baking. This helps prevent shrinkage and ensures a tender crust.
  • Prevent a Soggy Bottom: Blind bake your crust for custard or fruit pies with very wet fillings. Brushing the bottom with an egg wash before baking can also create a barrier against moisture.
  • Don’t Overfill: Leave a little room at the top of your pie dish for the filling to expand during baking.
  • Let it Cool: Patience is a virtue, especially with pies! Allow your pies to cool completely (or almost completely) before slicing, especially custard-based ones. This allows the filling to set properly, resulting in clean slices and the best texture.
